The pickles

No home, restaurant or tavern in Florina lacks the delicious pickles made in the area. Almost all garden vegetables are pickled (cucumbers, tomatoes, peppers, cabbages, eggplants, etc.). Pickles are even made from fruit, although this is more rare. (Such fruits are grapes, cherries, apricots and plums, apples, pears as well as melons and watermelons).
The most popular pickles of the region are made from pepper and cabbage. Stuffed peppers with cabbage, hot peppers, small peppers, whole or chopped cabbage and mixed with other vegetables, the visitor finds in the local market and local product shops in our city. Pickles are also used to make many delicious dishes, the most famous of which are sarmadakia, pickled cabbage with meat, and even pies.
In Florina, pickles are mainly prepared in vinegar. The vegetables are first blanched in boiling water to soften and then placed in large buckets or glass jars, which are then filled with vinegar and salt. The vinegar that is usually used is homemade and is made from white or red wine.
